To welcome you, we invite you to share the original cuisine prepared by the Table de Cana.
 
La Table de Cana  

La Table de Cana is an association created in 1985 by Franck Chaigneau, an IT engineer and Jesuit priest, as a means of allowing people who have been out of the workforce for some time to return to employment. “The catering profession appeals to them because it combines the reassuring element of food and the festive element of an event”, explains Franck. La Table de Cana is now an “economic workforce development agency”, as well as being a brand that is recognised first as a key player in the food service industry, especially in the catering and reception organisation professions, but also as the largest economic workforce development agency for this profession. After a period of expansion, La Table de Cana has organised itself into a Federation of economic workforce development agencies, now with 6 companies in 5 cities: Paris, Lyons, Marseilles, Montpellier and Grasse.
La Table de Cana defends the main issues facing a Sustainable Planet. It hopes to be an example for groups, businesses, networks and society in general of an alternative that respects Man and his environment, enhanced and more fulfilling. It advocates and supports the commitment of each of its members to the following issues:
•          responsible supplies which privilege the lowest environmental impact (local, seasonal produce, organic, fair trade, traditional...);
•          savings in resources: water, electricity and all forms of energy by applying procedures, making progressive choices in clean modes of transport, choosing products that need little packaging...
•          environment-friendly: using biodegradable cleaning products, sorting waste, choosing recyclable or compostable disposable materials.
  


Awards of the Sud’Innov Contest

The ARIA and MidiPack invite you to attend the awards of the 1st edition of Sud’INNOV. This contest was launched to reward innovative agroprocessing businesses. 30 participants registered for this first edition.
 
ARIA

The mission of ARIA Languedoc-Roussillon (Association Régionale des Industries Agro-alimentaires or Regional association of the agroprocessing industry) is to represent the companies and the regional agroprocessing sector, to unite the regional companies and to help them develop, in particular by promoting their expertise and their products. It now represents 70% of the economic weight of the regional agroprocessing industry: a turnover of 8 billion euros and a taskforce of over 21,000 employees. 225 businesses in 13 segments actively take part each year in the actions organized by ARIA LR. Its operating principles are supported by simplicity, friendliness, professionalism, apolitism through experience sharing, ongoing dialogue between executives, directors and employees and a methodology of transversal groups/workshops operating within a network.
Since 2008, ARIA LR wishes to spur an innovation culture within these companies, in order to make it a true development asset. With this in mind, ARIA-LR has undertaken two actions : the Sud’INNOV contest, launched with Midipack, and the event “Rencontre Innovante des Talents Culinaires en Languedoc-Roussillon” (see p. XX).
 
 
Midi Pack
 
Midipack is the network of the wrapping and packaging companies of the Languedoc Roussillon region.
After having made an economic analysis of the area, identified what already existed at the regional and national level and collected the suggestions of the segment’s enterprises, the group of territorial communities worked together to create the MIDIPACK group. The segment's enterprises in Languedoc Roussillon worked on this project and founded a regional association (in 2006) integrating and governed only by the manufacturers of this industry.
This 1901 law association now includes thirty or so companies that contribute with their complete and full know-how on packaging in different fields such as wine growing, agri-food systems, cosmetics, pharmaceutical industry, industry, communities, etc. This network represents a turnover of 59.5 million euros. Around 50% of the cumulative turnover is generated within the region, 35% at the national level and 15% abroad.

We invite you in an exceptional place, the Abbaye de Valmagne, to taste innovating specialties and to exchange with their creators.
 
Farmer Market: 14 producers from the association Terroir Direct will offer a wide variety local products: cheese, vegetable chips, almonds, olives, cold meats, fruits, traditional bread, fruit juice. You can also enjoy a wide variety of wines, brought by different producers: rosé wine, red wine, Muscat, Picpoul. You can also, if you wish, buy products to take at home and to offer.

Terroir Direct is an association of 90 producers from the Cévennes and Languedoc regions. Its structure has been given a “short circuit collective group” status by the Languedoc Roussillon Region. It offers consumers from the areas around Nîmes and Montpellier an alternative supply system for fresh, top quality farm produce. The priority is given to local supplies (80%), and additional products are proposed from other regions. The range promotes organic, AOC, responsible agriculture and small-holding produce.
Every week, consumers can order via the Internet the retail products of their choice, from a list of almost 500 articles (fruit and vegetables, meat and poultry, dairy produce, fish, bread, eggs, miscellaneous grocery produce…). The producers prepare and harvest in relation to the demand, and the fresh produce is transported the next day to a warehouse near Montpellier. The boxes are prepared and consumers collect them from one of the “delivery points” in the districts or villages.

 
Rencontre Innovante des Talents Culinaires en Languedoc-Roussillon” : come taste 9 innovating receipes and take part in the jury to evaluate them. This encounter is promoted by ARIA (see p. XX) to invite chefs and firms to create one or several new recipes (not previously existing, nor already rewarded or marketed) and have the potential of being used in the industry. This year, for the first edition, the guiding concept is sustainable development. This encounter gives an occasion to gather within each team a regional chef, a regional agroprocessing business and a student or apprentice around a gourmet event.
 
 
Abbaye de Valmagne

An exceptional cultural heritage
The Abbaye de Valmagne (Valmagne Abbey) was founded as a Benedictine abbey in 1139 and attached to the Cîteaux Abbay in 1159. It was one of the richest monasteries in the South of France from the 12th century to the beginning of the 14th century. The Abbey was seriously damaged in the Hundred Years War and the Wars of Religion, and was completely abandoned and wrecked during the French Revolution. The current church, in the classic Gothic style, was built in 1257. It is 23 m high and 83 m long, making it one of the best preserved examples of Cistercian art. In 1820, oak barrels from Russia were installed in the apse of the church, hence its nickname of “Cathedral of Vines”, saving it from becoming a stone quarry.
 
The vineyard: a leader in organic agriculture
Today, the Abbey is the headquarters of a vineyard and particularly well-reputed wine cellar. Back in the 12th century, the Cistercian monks had already planted vines in Valmagne, as was the custom in all their abbeys. Since then, this land has always had vines on it. The vineyard has been by same family since 1838, which also cares for the historical monument. The wines produced were exported to Mexico in the 19th century and today are exported all over the world, as well as being distributed by wine merchants throughout France.
The vines are grown mechanically to avoid having to use chemical products and fertilizers that are harmful to the environment, and a conversion to organic farming is in progress. Of the 75 ha in the domain, the steepest parts (30 ha) have received Appellation Contrôlée status, particularly the red sandstone land which makes it possible to produce the famous Cuvée de Turenne wine.
The vinification and bottling processes use the most modern techniques available: parcel selection, pneumatic pressure control, temperature control, rigorous hygiene conditions, air-conditioning in the wine warehouses…, with the techniques always used to better express the “terroir”.
